A lot of people don't want to order dessert after their meal, but they have really good Skillet Chocolate Chip Cookies and warm Molten Chocolate Cake. I like to tell diners that they can get dessert to go, because when they make to-go desserts, the cooks separate everything so it's super-easy to put it in the microwave and still have that warm cookie effect with ice cream on top.
What's the most caloric order you've ever taken? A lot of our desserts are shareable, and a lot of our appetizers are meant to be shared. On top of that, they also had the bottomless chips and salsa. I was thinking, Oh, they're definitely going to need a box for some of it.
But nope, they ate all of it. Even I get filled up just on the chips and salsa, so having all of that food get ordered, I was like, Whoa. It is a tough balance especially when serving — I'll automatically refill their drinks, but with chips and salsa, I like to check in because sometimes people would just rather that once the chips are gone you stop bringing it.
So after the second time that I've refilled their chips, I'll always ask, "Do you want more chips, or should I wait till your meal comes out? What are your favorite customers like?
Definitely people who are willing to talk to you a little bit and tell you about their day and how they're doing. I also really love waiting on kids. They're so cute, especially when they're just getting to that age where they're so excited to tell you their order and be a big kid. I like to get down on their level and hear about their day. I had two little girls come in with their mother, and they were going to see the Globetrotters.
The little girl was so excited about getting to see the basketball players. At the end of the meal, she was like, "I'm going to come back and tell you how tall they were!
